One-pot chicken Alfredo is a convenient and delicious dish that combines tender chicken, creamy Alfredo sauce, and pasta, all cooked in one pot. Here's a simple recipe for you to enjoy:

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound (450g) boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 ounces (225g) fettuccine pasta (or any pasta of your choice)
  • 3 cups chicken broth (low sodium)
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme, etc.)
  • Salt and pepper to tasteFresh parsley for garnish

Instructions:

  1. Heat the olive oil over medium-high heat in a large pot or deep skillet.
  2. Season the chicken pieces with salt and pepper.
  3. Add them to the pot and cook until they are browned on all sides, about 5-6 minutes.
  4. Once cooked, remove the chicken from the pot and set it aside.
