One-pot chicken Alfredo is a convenient and delicious dish that combines tender chicken, creamy Alfredo sauce, and pasta, all cooked in one pot. Here's a simple recipe for you to enjoy:

  • 1 tablespoon olive oil
  • 1 pound (450g) boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 ounces (225g) fettuccine pasta (or any pasta of your choice)
  • 3 cups chicken broth (low sodium)
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme, etc.)
  • Salt and pepper to tasteFresh parsley for garnish

  1. Heat the olive oil over medium-high heat in a large pot or deep skillet.
  2. Season the chicken pieces with salt and pepper.
  3. Add them to the pot and cook until they are browned on all sides, about 5-6 minutes.
  4. Once cooked, remove the chicken from the pot and set it aside.
  5. In the same pot, add the minced garlic and dried Italian herbs.
  6. Cook for about 1 minute until the garlic becomes fragrant.
  7. Pour in the chicken broth and scrape the bottom of the pot to deglaze, picking up any flavorful bits from cooking the chicken.
  8. Add the uncooked pasta to the pot, submerging it into the broth as much as possible.
  9. Bring the mixture to a boil, reduce the heat to medium-low, and cover the pot with a lid.
  10. Let the pasta simmer for 10-12 minutes or until it's cooked to al dente, stirring occasionally.Once the pasta is cooked, stir in the heavy cream (or half-and-half) and grated Parmesan cheese.
  11. Return the cooked chicken to the pot and mix everything, ensuring the chicken and pasta are coated in the creamy sauce.
  12. Cook for 2-3 minutes, allowing the sauce to thicken and the chicken to heat through.
  13. Taste the dish and adjust the seasoning with salt and pepper, if needed.
  14. Remove the pot from the heat and let it rest for a few minutes, allowing the sauce to thicken further.
  15. Serve the one-pot chicken Alfredo in individual plates or bowls, garnishing each serving with chopped fresh parsley for a pop of color.

Enjoy your creamy and comforting one-pot chicken Alfredo! This dish is perfect for a quick weeknight dinner, and the fact that it's all cooked in one pot means less cleanup and more time to savor your meal.
