A flourless chocolate cake is a luxurious dessert that's rich, fudgy, and perfect for chocolate lovers. Here's a decadent recipe that's sure to impress:

Ingredients:

  • 1 cup (225g) unsalted butter
  • 1 1/4 cups (250g) granulated sugar
  • 1 cup (200g) high-quality semisweet or bittersweet chocolate, chopped
  • 1/2 cup (100g) high-quality cocoa powder. I love this double dark cocoa blend by King Arthur.
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • Optional: Whipped cream, fresh berries, or powdered sugar for serving

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease an 8-inch (20cm) round cake pan and line the bottom with parchment paper for easy removal.
  3. In a medium-sized saucepan, melt the butter over low heat. Once melted, add the chopped chocolate and stir until the chocolate is completely melted and the mixture is smooth.
  4. Remove the saucepan from the heat and whisk in the granulated sugar until well combined.
  5. Sift the cocoa powder into the chocolate mixture to prevent lumps. Add the salt and vanilla extract. Stir until everything is incorporated.
  6. Allow the chocolate mixture to cool slightly. Then, one at a time, beat in the eggs, mixing well after each addition. The batter will become smooth and glossy.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake the cake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. The cake should have a slightly cracked top.
  9. Remove the cake from the oven and let it cool in the pan for about 10 minutes.
  10. Then, run a knife around the edge of the cake to loosen it from the sides of the pan.
  11. Place a serving plate on top of the cake pan and carefully flip it over to release the cake onto the plate. Remove the parchment paper from the bottom.
  12. Allow the cake to cool completely before serving. It's normal for the cake to sink slightly in the center as it cools.
  13. Once the cake is cooled, you can dust it with powdered sugar or serve it with a dollop of whipped cream and fresh berries for added flavor and visual appeal.
