Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder (dark or unsweetened)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk (or mix 1 cup milk with 1 tablespoon lemon juice or vinegar, let sit for 5 minutes)
  • 2 large eggs
  • 1 teaspoon vanilla extract

  2. In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until well blended.
  4. Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix; a few lumps are okay.
  5. Fold in the dark chocolate chips or chunks into the batter.
  6. Using a scoop or spoon, divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for about 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs (not wet batter).
  8. Remove the muffins from the oven and let them cool in the muffin tin for about 5 minutes, then transfer them to a wire rack to cool completely.
